In the preparation step, heat the grill or smoker to 225°F, removing a part of the fat cap until it measures only 1/4 inch thick.
Score the fat by making a grid pattern in the fat cap. Sprinkle the blend of spices and mustard evenly across the whole pork shoulder.
Smoke for two hours. Open the pulled pork now and spray it. Keep spritzing the meat every hour.
Wrap the pulled pork with foil or parchment paper after the internal temperature has reached 160°F.
Cook the pulled pork until the internal temperature reaches 195–205°F. Notice that the pork is juicier but less tender and stringier at 195 degrees.
When the pulled pork reaches the internal temperature, remove it then let it rest before shredding.
